Are you looking for something quick and healthy to make for your family? Consider this low-glycemic, low-salt dinner. It’s simple to make and tastes great.
On the menu tonight:
- Seasoned Chicken
- Brown Organic Rice
- Snap Peas
Brown Organic Rice
- In saucepan, add 1 cup of cold water and ½ cup of brown organic rice
- Bring contents to a boil
- Stir, and turn heat down to low
- Cover and cook for 45 minutes
Note: You can substitute white organic rice. It cooks in 15 minutes, and will allow you to have dinner on the table in 30 minutes or less.
Seasoned Chicken
- Cut chicken into chunk slices
- Add 1 – 2 Tablespoons of olive oil to frying pan
- Warm frying pan and add chicken
- Once chicken is cooked, sprinkle with Mrs. Dash (We used Fiesta Lime.)
Snap peas
- Rinse snap peas and pat dry
- Add 1 Tablespoon of olive oil to frying pan and warm
- Add dry snap peas to frying pan
- Stir snap peas so they are coated with olive oil
- Cook 5 – 10 minutes, depending on quantity
Serving Tips
Serve on a bright solid colored plate. For our dinner, we used an orange plate by Fiesta. You can read more about our dishes here: Fiesta Dishes
Place a 1/2 cup of rice on each plate. Next, top the rice with chicken. Lastly, place the snap peas around the edge of the plate, around the rice and chicken.
