What’s for Dinner? Shrimp Scampi

Are you looking for something different to eat?  Consider having shrimp scampi with linguini for dinner.

Ingredients

  • 1 box linguini (1 pound)
  • 1 pound of peeled, deveined, cooked shrimp
  • 1 lemon
  • 2 cloves garlic
  • Sprinkle of red pepper flakes (key ingredient for flavor)
  • 3 Tablespoons butter
  • 3 Tablespoons olive oil
  • Salt
  • Pepper
  • 1/2 Cup dry white cooking wine (at grocery store)
  • Parsley

Linguine

  • In a large pot, boil water
  • Once boiling, add 1 box of linguini
  • Cook 8-10 minutes, or according to directions on package

Shrimp

  • While water is boiling, thaw shrimp in bowl of cold water
  • Cut lemon in half; squeeze juice into small bowl or pitcher
  • Put 2 Tablespoons of butter, 2 Tablespoons of olive oil and pepper flakes in frying pan (Do not turn heat on yet)
  • Use garlic press to prepare 2 cloves of garlic; add garlic to frying pan
  • When water for linguine boils, add linguine
  • Turn on frying pan to sauté garlic
  • Add 1/2 cup of dry wine and juice of 1 lemon to frying pan; bring to boil
  • Add 1 tablespoon of butter and 1 tablespoon of olive oil to frying pan
  • Drain shrimp and season with salt and pepper
  • Turn down heat once butter melts in frying pan; add shrimp
  • Cook shrimp for 5 minutes, or until warm

To Serve

When pasta is ready, drain pot of water.  Put linguini on dinner plates, and top with 6-7 shrimp.  Drizzle sauce; sprinkle with parsley.  Cover each plate with tin foil to keep warm.

Notes

For this dinner, we opted to use pre-cooked frozen shrimp.  However, fresh shrimp may be substituted.

This meal is best served hot.  Since it cools off very quickly, we suggest covering each plate with tin foil to keep warm.

Although shrimp may seem expensive, this meal will serve 4-6 people.  So even if you spend $10-20 on shrimp, this meal is still less expensive than ordering take out.
