On the menu tonight:
- Lemon Pepper Cod
- Cod on the Cobb
- Organic Baby Spinach and Lettuce with low-fat ranch dressing
Lemon Pepper Cod
- Pre-heat oven to 400
- Spray baking sheet with Pam Cooking Spray
- Place Panko Lemon Pepper bread crumbs on a plate
- Dip cod in water, coat with breadcrumbs and place on baking sheet
- Cook for 20-25 minutes, depending on thickness of fish
Corn on the Cobb
- In large pot, boil water
- Peel corn
- When water is boiling, add corn
- Cook for 7-10 minutes
Organic Baby Spinach and Lettuce
- Rinse lettuce
- Add vegetables as desired (cucumber, grape tomato, shredded carrots)
- Serve with low-fat ranch dressing
Set the table, pour your drinks and then it’s time to serve dinner. 🙂
