Are you wondering what to do with all of the strawberries you just picked?\u00a0 Consider making strawberry muffins.\u00a0 They are great for breakfast.\u00a0 Top the muffins with a cream cheese frosting, and they\u00a0become an alternative to a birthday cake.\u00a0 See our recipe below.<\/p>\n

Strawberry Muffins <\/strong>(makes 24 \u2013 28 muffins)<\/strong><\/p>\n

Ingredients:<\/h4>\n

2 1\/2 cups chopped strawberries<\/p>\n

1\/3 cup vegetable oil<\/p>\n

1 cup milk<\/p>\n

2 eggs<\/p>\n

\u00bd cup applesauce (unsweetened)<\/p>\n

\u00bc cup honey<\/p>\n

2 cups whole wheat flour<\/p>\n

2 cups white flour<\/p>\n

1 cup sugar<\/p>\n

1 teaspoon salt<\/p>\n

2 tablespoons baking powder<\/p>\n

1 \u00bd teaspoons cinnamon<\/p>\n

1 can of cream cheese frosting<\/p>\n

Directions:<\/h4>\n

  1. Cut strawberries and place in bowl. Set aside. (When finished cutting, you should have 2 \u00bd cups of chopped strawberries.)<\/li>\n
  2. In a small bowl, mix oil, milk, eggs, applesauce and honey. Set aside.<\/li>\n
  3. In a large bowl, mix flour, sugar, salt, and baking powder. Then add berries to this dry mixture.<\/li>\n
  4. Add liquid ingredients from small bowl to ingredients in large bowl.<\/li>\n
  5. Pre-heat oven to 350 degrees.<\/li>\n
  6. Line muffin pans with baking cups. (We used Reynolds \u201cStay Brite\u201d baking cups. The outside design was colorful and bright, and stayed that way even after the muffins came out of the oven.)<\/li>\n
  7. Fill each baking cup with mixture. (Just shy of the top.)<\/li>\n
  8. Bake for 20-25 minutes. Check with toothpick to confirm they are finished.<\/li>\n<\/ol>\n

    Once cool, top with cream cheese frosting from can.\u00a0 (We chose the one without high fructose corn syrup.)<\/p>\n
